You must store the risotto within two hours of cooking and at the right temperature (below 39.2⁰F or 4⁰C).

However, even if freezing does help prevent bacterial illnesses, you should also be aware of how it affects the integrity of the dish.

Also, make sure that when you use plastic bags, the moisture will not leak. You can also double-bag it or place it in another container to make sure. If you do not have a lid for your container, use plastic or cling wrap. Just make sure it is secured. 

Which Is Better: Freeze Risotto or Store in Fridge?

You might wonder whether freezing or refrigerating is the best way to go with your risotto, and I have an answer for you. 

It is better to refrigerate risotto, especially if for short-term storage. Storing in a fridge helps avoid the differences in texture and taste that freezing will cause. Thawing would also not be a problem. However, you would have to use it within a few days. 

Quality-wise, refrigerating is the best option, as you would not have to thaw it, which is when most of the damage to taste and texture is done. However, if you have too much risotto that can’t be consumed within a week, it is better to freeze it to prevent the food from spoiling. 

How To Freeze Risotto

Improper storage is one of the main culprits for the contamination of bacteria, so you need to know how it must be done. To freeze risotto, you need to cool it down first. Then, after cooling, place it in an airtight container or plastic bag. Then, you can freeze it at or below 0⁰F (-18⁰C), if possible.

Cool the Risotto Within Two Hours

If you just cooked risotto, you should avoid putting hot food inside the refrigerator, because it impacts the temperature inside the fridge or freezer, and the food already inside.

You can also put it in a pan then place it in a fridge for faster cooling once it’s not extremely hot anymore.

Pack the Risotto in a Bag or Airtight Container

After cooling, you may transfer it to a freezer bag, resealable bag, or airtight plastic container. Avoid using glass because this can break at very low temperatures. 

Since risotto has moisture, you must ensure that the bag or container is leak-proof. This is to avoid making a mess inside your freezer. If you have to, place the bag in another container or bag to catch any leaks.

Freeze Risotto Quickly

You’ll need to freeze your risotto quickly at cold temperatures because Bacillus cereus thrives best at temperatures above 39.2 ⁰F (4⁰C). Hence, you need to avoid storing your risotto at that range to prevent contamination. The best temperature to freeze your risotto would be at or below 0⁰F (-18⁰C).

How Do You Properly Thaw Risotto? 

To properly thaw risotto, place it in the fridge overnight to thaw. But, if you are short on time, use the microwave. However, you need to do it in intervals and add water now and then to avoid drying it out. 

Afterward, you can reheat the risotto using your stove, microwave, oven, or steamer. You may also use it to make risotto balls, patties, risotto cakes, and other dishes.
